My parents’ tree was shooting starfruits.
I was lucky enough to catch a few and made these little pretties.
2 cups of all purpose flour
2 tsp baking powder
1/2 tsp salt
1 cup of sugar
1/2 cup butter, softened
1 tbsp vanilla
1 tbsp apple cidar vinegar (or white vinegar), or 1 egg
1 cup of milk, room temp
1 starfruit peeled and diced.
~To peel the starfruit, first slice off the star tips. Next, slide your knife gently under the skin and go down the length of the fruit for each indentation and peel off the skin. The skin can be eaten as it is very thin and sweet. For cooking though, I preferred to remove it. The entire fruit can be eaten, i.e. there is not a hard pit. You will find some seeds though they are very easily removed.
Preheat oven to 375 degrees. Grease your muffin pan or insert liners.
Sift together your flour, baking powder, and salt.
In a separate bowl cream together the butter, sugar, and vanilla with a mixer. Add the milk and stir. Then add the dry ingredients while mixing, little by little.
Lastly, gently stir in your starfruit.
Bake for 20-25 minutes or until toothpick comes out clean when inserted in the middle. Remove from pan and let cool on a wire rack.
1 cup of confectioners sugar
1 tsp vanilla extract
1-3 tbsp milk
Combine ingredients until you reach your desired consistency.
Take one starfruit and peel as shown above. Thinly slice as many pieces as needed.
Once your muffins are cool, pour the glaze over them, dripping is ok, and top with a starfruit.
